The third thing to do while up north is to take a Muay Thai training camp, there is one in Chiang Rai called Mountain Muay thai that includes food and accommodation, I haven’t been there but has good reviews, there are many others camps of course, some popular with girls, it is a matter of doing a bit of research.
Muay thai, thai massage and thai cooking are the things to learn in Thailand, the so called paradisiac beaches become boring after a couple of days.

I ended up myself crossing the border twice to renew my visa due to the two-week massage courses. I suggest you shop around with the best schools: Oldest one is Old Medicine Hospital, when I was there the fees included basic shared accommodation and lunch, I took with them a weekend foot massage course, which I highly recommend, they also offer the classic two week full body massage, but they also provide massages for customers, of course being a school the masseurs are very skilled. ITM is another popular school with foreigners, I personally recommend Loi kroh if you prefer learning full body massage one-2-one practicing on a teacher rather than on students, there are a few hotels just in front of this school which has a lovely garden where you can sit with a cup of tea blogging away your experiences.
My advise while in Chiang Mai is to hire a bicycle on a weekly basis to move around town and spend some time learning the best massage ever invented.
